This is my newest recipe that actually started as an experiment:).  My kids wanted tacos and I had no tortillas on hand. I find it difficult to purchase tortillas anyway.  Many of the whole grain versions are loaded with “extra” ingredients.  I have found brands in the frozen section that contain only a handful of ingredients, but they always seem to fall apart. And unfortunately the corn tortillas found in the frozen section are not at all favored by my kids.

I decided to try and make a taco bowl instead and test it on the kids.  I gathered up a few ingredients including brown rice and beans and a few veggies that I thought I could easily “hide”. I used my normal taco seasoning which consists of: 1 1/2 teaspoons chili powder, 3/4 teaspoons ground cumin, 3/4 teaspoons dried oregano and 1/2 teaspoon salt.  It came together great and while my daughter was not thrilled, my son and I loved it. He even asked me to send it to school with him for lunch the next day.  Two out of three is called a win in my house:) I will most definitely be making this again soon.

Tip: Brown rice takes a little longer to cook (40 – 50 minutes) so make sure that you start your rice before you start chopping up veggies and prepping the remaining ingredients.

Lime & Cilantro Burrito Bowls

Ingredients

  • 1 cup brown rice
  • 2 tablespoons olive oil
  • 1/2 small onion, chopped
  • 1/2 green pepper,chopped
  • 1 large carrot, chopped
  • 1 lb ground beef
  • 1 can black beans, drained
  • Juice of 1 1/2 limes
  • 3-4 tablespoons fresh cilantro
  • 1 1/2 teaspoons chili powder
  • 3/4 teaspoons ground cumin
  • 3/4 teaspoons dried oregano
  • 1/2 teaspoon salt

Directions

  1. Cook brown rice according to directions.
  2. Heat oil in a large sauté pan over medium heat. Add onion and cook 3-4 minutes.
  3. Add ground beef and cook until browned all the way through. Drain off the fat.
  4. Add pepper, carrot and black beans and cook 2-3 minutes on low heat.
  5. Turn off heat. Add chili powder, ground cumin, oregano, and salt and stir in thoroughly.
  6. Add rice and mix well.
  7. Top with lime juice and cilantro and combine thoroughly.
  8. Enjoy!
