My kids have never been big breakfast eaters. When they were toddlers, they would have a sippy cup of milk in the morning and then we wouldn’t eat breakfast for about 2 hours because they were full from their milk. I was a stay at home mom so this was perfectly fine until they started school. Now I had to find a way to get them to actually eat a full breakfast before I sent them off in the morning.  I tried oatmeal, granola bars, yogurt and whatever else I could think of as breakfast food.  Finally I came up with this smoothie and two years later it is still their favorite breakfast.  It transforms a hearty and filling breakfast into a quick to drink smoothie.  I love that it takes about 5 minutes to make and 5 minutes to drink.  It gets us out the door on time with full tummys. Here’s the recipe:


PB & Banana Breakfast Smoothie

Ingredients

  • 1/3 cup oats
  • 1 banana
  • 1 tablespoon nut butter
  • 1 teaspoon chia seeds
  • 1 teaspoon ground flaxseeds
  • 1 1/3 cup milk of choice
  • Optional: 1 teaspoon honey

Directions

  1. Blend all ingredients together in blender. Serve immediately.

I use my Ninja single serve cups because they are the perfect size and it makes clean up much easier than having to clean the large blender every morning.  If your kids like to drink their smoothie’s with a straw like mine do then be sure to get the larger straws.  The texture of this smoothie is a little thick so it makes it hard to drink from normal size straws. Also, here’s a little tip about bananas. If you find your bananas getting too ripe, do not throw them away.  Peel them, place them in a ziplock bag and toss them in the freezer.  They can be used for smoothies and even banana ice cream.
