Quinoa and Avocado Power Salad by Stephanie Lang | Jun 1, 2015 | Uncategorized | 0 comments Print Yum Quinoa and Avocado Power Salad Ingredients1 cup quinoa 2 avocados, diced 3 ozs baby spinach 8 ozs cherry tomatoes, cut in halves green onion for garnish 1 clove garlic, minced 2 tbsp red wine vinegar 2 tbsp olive oil salt to taste DirectionsCook quinoa as directed and let cool completely. Be sure to rinse before cooking. Combine quinoa, avocados, spinach and tomatoes in a large salad bowl. In a small container, combine garlic, red wine vinegar, olive oil and salt. Drizzle over salad and mix well.
