Quinoa and Avocado Power Salad


  • 1 cup quinoa
  • 2 avocados, diced
  • 3 ozs baby spinach
  • 8 ozs cherry tomatoes, cut in halves
  • green onion for garnish
  • 1 clove garlic, minced
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • salt to taste


  1. Cook quinoa as directed and let cool completely. Be sure to rinse before cooking.
  2. Combine quinoa, avocados, spinach and tomatoes in a large salad bowl.
  3. In a small container, combine garlic, red wine vinegar, olive oil and salt.
  4. Drizzle over salad and mix well.
  5. Garnish with green onion.
